This is my showstopper meal when I entertain, but I've always referred to it as "Shabu-Shabu" (even though I'm Chinese and should really use "hot pot", or "steamboat" as my father would say). Since meat costs a lot here, we prefer to grill it (table grill) and eat it with homemade sauces (similar to the ones served at the restaurant) and chips. And before slicing the meat up thinly for hot pot, usually the meat is frozen in advance. The meat is actually usually lower quality (not the tenderloin or anything), but from the butt or shoulder. Beef is usually rib eye. The roundness in that picture (the lamb meat is actually from <A HREF="http://www.myshabuhouse.com/" REL="nofollow">My Shabu House</A>) may be attributable to the way it was tied or wrapped before it was frozen.<BR/><BR/>Thanks <B>LisaIsCooking</B>, my version is definitely open to interpretation, so feel free to use those listed ingredients and add your own!<BR/><BR/><B>Foodhoe</B>, I think I misled some people in this post, but the top three pictures are from Raclette Stube, the next four pictures are from My Shabu House, and the remaining pictures are from my own hot pot meal!
